Baked Salmon Sandwich Recipe
Ingredients
| White bread slice | 6 | |
| Onion | 1/4 Cup (16 tbs), minced | |
| 2 tablesp. butter, margarine, fat, or salad oil | ||
| 3 tablesp. flour | ||
| 1 1/2 c. bottled milk or 3/4 c. evaporated milk and 3/4 c. water | ||
| Salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Salmon | 1 1 Pound, flaked | |
| 1 tablesp. lemon juice | ||
| 1/3 c. grated processed American Cheddar cheese | ||
Directions
Lay the bread slices side by side in a shallow baking dish.
Cook the onion until tender in the butter in the top of a double boiler over direct heat.
Add the flour, and blend.
Add the milk, salt, and pepper, and cook over boiling water until smooth and thickened, stirring constantly.
Add the salmon, from which the skin has been removed, and the lemon juice.
Pour over the bread slices, and top with the cheese.
Bake in a moderately hot oven of 375°F.for 30 min.
