Ingredients

 Eggs3 , beaten
 2 cups reconstituted nonfat dry milk or fluid milk
 Sugar1/2 Cup (16 tbs)
 Vanilla1 Teaspoon
 Salt1/2 Teaspoon
 1 3/4 to 2 cups cooked or leftover rice
 Raisins 1/2 Cup (16 tbs)
 Ground nutmeg

Directions

Combine first 5 ingredients; mix well.
Add rice and raisins.
Turn into 10 x 6 x 1 3/4-inch baking dish.
Bake, uncovered, at 325° for 30 minutes; stir.
Sprinkle with nutmeg.
Bake till knife inserted halfway between center and edge comes out clean, about 30 minutes more.
