Medium sized baking potatoes - 4
Fresh dill - 1-1 1/2 tbsp, chopped
Sour cream or smetana - 1 cup
Caviar or black lumpfish roe - 6 tbsp
Salt
Garnish with:
Lemon wedges - 4
Sprigs of fresh dill
Directions
GETTING READY
1 Preheat the oven to 400°F.
2 Scrub the potatoes completely clean under the running cold water.
3 Dry them, and wrap each one in foil.
MAKING
4 Bake in the oven for 50 minutes or until tender.
5 Pull aside the foil just enough to be able to make a deep crosswise incision right across the top of each potato.
6 Press the ends of each potato toward the middle.
7 Top each with a pinch of salt, chopped dill, 3 tbsp sour cream, and the caviar or lumpfish roe.
SERVING
8 Serve at once.
