Ingredients

 6 potatoes, each weighing about 250 g (8 oz)
 Butter75 Gram
 Chopped parsley to garnish
 Salt To Taste
 Pepper To Taste

Directions

Scrub the potatoes well and dry.
Cut a cross on one side of each.
Rub all over with butter paper and cook on the rack in a preheated moderately hot oven, 200°C (400°F), Gas Mark 6, for 1 1/4 hours.
Push back the cut skin to open up the cross and top with 15 g (1/2 oz) butter.
Sprinkle with salt and pepper and chopped parsley to serve.
