4 medium size potatoes
 
1/2 cup plain yogurt
 
3 tbsp pimento stuffed olives, chopped
 
1 tsp parsley, chopped
 
1 tbsp green onions, chopped
 
Salt and pepper

Directions

With a fork, prick potatoes 3-4 times.
Place in the middle of a microwave safe dish.
Cook potatoes 14-16 minutes, on high.
Meanwhile, mix remaining ingredients.
Once potatoes are cooked, cut one side of each potato crosswise.
Pry apart.
Spoon olive yogurt into the middle.
