Baked Potato With Egg Recipe
Ingredients
3 medium potatoes
3 tsp shim milk
Salt and pepper to taste
6 eggs
Paprika
Directions
Wash and scrub the potatoes.
Bake at 425°F (220°C) about 40 minutes or until tender.
Reduce oven heat to 350°F (175°C).
Cut potatoes lengthwise in half.
Carefully scoop out potatoes in a small bowl without breaking the skin.
Mash potatoes with the milk.
(If potatoes seem dry, add a small amount of hot water.) Beat until light and fluffy.
Fill potato skins, leaving a hollow in the middle.
Break an egg in each hollow.
Season with salt and pepper and sprinkle with paprika.
Place back in oven and bake for about 7 minutes until egg is firm but not hard.
