Baked Plum Pudding Recipe

Ingredients
2 eggs
1 egg white
3 tsp granulated sugar replacement
1/4 cup liquid shortening
1 cup unsweetened plum puree (baby food)
1 cup flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
3 tsp skim milk
2 tsp lemon juice
Directions
Beat eggs and egg white until soft and fluffy; beat in sugar replacement, shortening and plum puree.
Combine flour, baking soda, cinnamon and nutmeg in sifter.
Combine milk and lemon juice in cup.
Sift flour mixture alternately with milk mixture into plum mixture.
Fold gently to mix completely.
Pour into well greased 9 in. (23 cm) sq. baking dish.
Bake at 350°F (175°C) for 20 to 30 minutes, or until firm.
