Ingredients

 
1/3 cup butter
 
1/4 cup warmed honey
 
3 egg yolks
 
1 cup cookie or cake crumbs
 
1 cup finely chopped fresh peaches
 
3 egg whites
 
1/4 teaspoon salt
 
1/4 teaspoon almond flavoring

Directions

Preheat oven to 325° F. and butter a 1-quart casserole.
Cream butter until soft, add honey gradually, and beat until light and fluffy.
Add egg yolks one at a time, beating well after each addition.
Add crumbs and chopped peaches.
Beat egg whites until foamy, then add salt and beat until stiff but not dry.
Fold into yolk-fruit mixture, then add almond flavoring.
Pour into the prepared casserole, and bake in preheated oven for about 30 minutes, or until lightly browned.
