Baked Orange Roughy Recipe

Baked Orange Roughy is a better mood elevator than a bar of chocolate! Seafood is one of the few ingredients I like to include in my daily cooking and this is my comfort recipe that I usually prepare using it. Best enjoyed as a Side Dish this recipe was taught to me by a dear friend who also happens to be a great chef. This Baked Orange Roughy is surely going to make you famous amongst your friends once they taste it. Try it right away!

Ingredients

 
1 pound orange roughy fillets
 
1 /4 cup lemon juice
 
1/2 teaspoon tarragon leaves
 
2 teaspoons dried mustard

Directions

Place fillets in large casserole that has been sprayed with nonstick cooking spray.
Squeeze lemon juice over fillets.
Sprinkle dried mustard and tarragon leaves over fish.
Bake at 400 degrees for 25 minutes.
