Ingredients
| 2 whole mackerel, gutted and cleaned | ||

| 4 fresh rosemary sprigs | ||
| Garlic | 2 Clove (5gm), sliced | |
| Red onion | 1 Small, thinly sliced | |
| White wine | 4 Tablespoon | |
| Parsley | 1 Cup (16 tbs), chopped | |
Directions
Preheat the oven to 200°C/400°F/gas mark 6.
Put each fish on a large piece of tin foil on a baking tray and season inside and out with black pepper.
Slice the lemon, then cut each slice in half.
Place the lemon slices inside each fish with a couple of rosemary sprigs and a few garlic slices.
Scatter the onion on top and pour the wine over each fish.
Wrap the foil loosely around each fish to make a parcel, and bake in the oven for 25 minutes.
Sprinkle over the chopped parsley to serve.
