2 pounds shoulder of lamb, cubed
1 tablespoon butter, melted
1 teaspoon salt
1/2 teaspoon pepper
1/3 cup dry vermouth
10 ounces frozen artichoke hearts, cooked and drained
3 eggs
1/3 cup Parmesan cheese, grated
1 1/2 tablespoons parsley, minced
Directions
1) Cook the lamb in melted butter in a pan until lamb is browned. Season with the salt and pepper, and add the vermouth. Cook over a high flame for 5 minutes.
2) Cover and bake in a 350 degree oven for 30 minutes. Add the artichoke hearts, cover, and bake for an additional 10 to 12 minutes.
3) Blend the eggs, cheese and parsley together, pour over the lamb and artichokes, and bake uncovered for an additional 10 to 12 minutes.
