Directions

In small skillet cook onion in butter till tender but not brown.
In a bowl mix the eggs, cream salt and pepper; beat well.
Stir in hominy and onion.
Turn hominy mixture into 10x6x2-inch baking dish.
Bake at 350° just till set, 25 to 30 minutes.
Let stand 5 minutes before serving.
