Baked Flounder Thermidor Recipe
Ingredients
| 1 1/2 lbs. fillets flounder or sole | ||
| 1 c. bottled milk or 1/2 c. evaporated milk and 1/2 c. water | ||
| Salt | 3/4 Teaspoon | |
| Speck pepper | ||
| 2 tablesp. butter or margarine | ||
| 2 tablesp. flour | ||
| 2 tablesp. Sherry | ||
| 1/4 c. grated processed American Cheddar cheese | ||
Directions
Place fish in a shallow, greased baking dish with milk, salt, and pepper.
Bake in moderate oven of 350°F for 30 min.
Meanwhile, melt butter in double boiler, and stir in flour.
When fish is done, pour off milk from dish, and add to butter and flour.
(Keep fish in a warm place.) Cook sauce, stirring constantly, until thickened.
Add Sherry and cheese, and stir until cheese melts.
Pour over the fish; just before serving place under broiler until lightly browned on top.
