 Fish fillets4
 Salt, pepper
 Butter15 Gram
 LOBSTER SAUCE
 1 green lobster tall, approximately 500g (1 lb)
 Water2 Cup (16 tbs)
 Black peppercorns1/4 Teaspoon
 Dry white wine1/2 Cup (16 tbs)
 Lemon juice1 1/2 Tablespoon
 Cream1/3 Cup (16 tbs)
 Egg yolks2
 Saffron1/4 Teaspoon
 Cornflour2 Teaspoon
 1 tablespoon water, extra

Directions

Skin and bone fillets.
Put fillets into greased ovenproof dish in one layer, sprinkle salt and pepper over.
Dot with butter.
Cover, bake in moderately hot oven for 15 minutes or until just tender.
Place fish fillets on individual serving dishes.
Spoon Lobster Sauce over.
Arrange a Pastry Crescent on side of each plate.
