Baked Fish With Lobster Sauce Recipe
Ingredients
| Fish fillets | 4 | |
| Salt, pepper | ||
| Butter | 15 Gram | |
| LOBSTER SAUCE | ||
| 1 green lobster tall, approximately 500g (1 lb) | ||
| Water | 2 Cup (16 tbs) | |
| Black peppercorns | 1/4 Teaspoon | |
| Dry white wine | 1/2 Cup (16 tbs) | |
| Lemon juice | 1 1/2 Tablespoon | |
| Cream | 1/3 Cup (16 tbs) | |
| Egg yolks | 2 | |
| Saffron | 1/4 Teaspoon | |
| Cornflour | 2 Teaspoon | |
| 1 tablespoon water, extra | ||
Directions
Skin and bone fillets.
Put fillets into greased ovenproof dish in one layer, sprinkle salt and pepper over.
Dot with butter.
Cover, bake in moderately hot oven for 15 minutes or until just tender.
Place fish fillets on individual serving dishes.
Spoon Lobster Sauce over.
Arrange a Pastry Crescent on side of each plate.
