Ingredients
1 tablespoon finely chopped onion
2 tablespoons butter or margarine
2 tablespoons all purpose flour
1 teaspoon chicken flavored bouillon granules
1 cup milk
1/8 teaspoon ground nutmeg
1 (10 ounce) package frozen chopped spinach, thawed and well drained
4 eggs
1/2 cup (2 ounces) shredded Cheddar cheese
Grated Parmesan cheese
Directions
Saute onion in butter in a heavy saucepan until tender.
Stir in flour and bouillon granules; cook 1 minute, stirring constantly.
Gradually add milk, and cook over medium heat, stirring constantly, until thickened and bubbly.
Stir in nutmeg and spinach.
Spoon equal portions of creamed spinach into 4 greased (6 ounce) custard cups or ramekins, spreading sides slightly higher than center.
Break an egg into each cup.
Bake at 350° for 30 minutes or until eggs are set.
Sprinkle with Cheddar and Parmesan cheeses; bake an additional 3 to 5 minutes or until cheese melts.
