Ingredients
Salad oil
1 medium-sized onion, diced
1 medium-sized green pepper, diced
1 medium-sized red pepper, diced
1 garlic clove, crushed
1 large eggplant cut into 1/2-inch pieces
1 medium-sized zucchini, cut into 1/4 inch-thick slices
1 8- to 8 1/4-ounce can tomatoes
1/2 cup water
1 1/2 teaspoons sugar
1 1/4 teaspoons salt
1/4 teaspoon thyme leaves
1 15 1/2- to 19-ounce can garbanzo beans, drained
3 ounces Cheddar cheese, shredded
6 eggs
Directions
1. In 12-inch skillet over medium heat, in 2 tablespoons hot oil, cook onion, green and red peppers, and garlic until tender. With slotted spoon, remove mixture to bowl; set aside.
2. In same skillet over medium heat, in 1/4 cup more hot salad oil, cook eggplant and zucchini until tender, stirring occasionally, about 15 minutes. Return pepper mixture to skillet; add tomatoes with their liquid and next 4 ingredients; over high heat, heat to boiling. Reduce heat to low; simmer 15 minutes, stirring occasionally. Stir in garbanzo beans; heat through.
3. Preheat oven to 425°F. Spoon vegetable mixture into 2 1/2-quart shallow baking dish. Make 6 deep indentations in mixture; sprinkle
2 tablespoons cheese into each. One at a time, break eggs into saucer and slip into indentations. Bake 12 minutes or until eggs are just set or of desired firmness.
