Baked Eggplant Slices Recipe

Ingredients
1 medium eggplant, peeled and sliced in -1/2 inch (1.25 cm) thick slices
1/2 cup (125 mL) mayonnaise (unsweetened)
2 green onions, chopped fine
1/2 tsp (2 mL) basil or thyme
1/2 cup (125 mL) Cheddar cheese, grated
1 cup (250 mL) fine soda cracker crumbs
Directions
€¢ Place the eggplant slices on a large plate.
€¢ Sprinkle each slice generously with salt.
€¢ Let stand 20 minutes, then pat dry to remove the accumulated moisture.
€¢ Blend together the mayonnaise and the green onions, basil or thyme.
€¢ Butter both sides of each eggplant slice with this mixture.
€¢ Blend in a large plate the Cheddar and cracker crumbs. Dip each eggplant slice in it.
€¢ Place on a cookie sheet or in 2 pie plates.
€¢ Place on microwave oven rack.
€¢ Bake 20 minutes in convection part of microwave oven at 375°F (190°C).
