Baked Eggplant Recipe
Baked Eggplant is a super delicious vegetable preparation that I prepare often, especially for my children. When it comes to vegetables the Baked Eggplant is one of the only dishes that my kids have. Try it!
Ingredients
| 1 large eggplant, cut into 12 slices | ||
| Olive oil | 2 Tablespoon | |
| Zucchini | 1 Cup (16 tbs), sliced | |
| Sliced tomatoes | ||
| 3 slices Mozzarella cheese, each cut into 4 slices | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
– Preheat oven to 350 °F (175 °C).
– Baste eggplant slices with oil and place in a baking dish. Season with salt and pepper. Garnish each slice with 3 zucchini slices. Season with salt and pepper. Top with sliced tomatoes and baste with oil. Season with salt and pepper.
– Bake in oven for 12 minutes. Spread Mozzarella cheese slices over vegetables and bake 3 minutes longer or until cheese begins to melt.
