1 medium-sized eggplant
Salt and pepper to taste
1 to 2 eggs, well beaten
About 3/4 cup fine dry bread crumbs

Directions
Slice unpeeled eggplant crosswise into 1/4-inch-thick rounds.
Sprinkle with salt, then dip each slice first into beaten egg and then into bread crumbs.
Lay slices flat (not overlapping) on a baking sheet well greased with oil or butter.
Sprinkle lightly with salt and pepper; dot each slice with butter.
Bake in a 450° oven about 20 minutes, or until browned.
