Baked Custard Recipe

Ingredients
6 eggs, slightly beaten
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla or other flavoring
1 quart (4 cups) milk, scalded
Cinnamon or nutmeg
Directions
Blend the eggs, sugar, salt, and flavoring; strain into the milk; mix well.
Pour into 6 or 8 greased custard cups or a 1 1/2-quart baking dish.
Set in a pan of hot water deep enough for the water to come as high on the outside of the containers as the custard is on the inside.
Sprinkle with cinnamon or nutmeg, if desired.
Bake in a 350° oven about 45 minutes for custard cups, or about 1 hour for a baking dish.
Test doneness by gently pushing the center of the custard toward one side with the back of a spoon.
If it breaks to form a crevice about 3/8 to 1/2-inch deep, the custard is done.
If only the top pulls away and the custard is soupy, it is not done.
