Ingredients
1 1/2 pounds cod fillets (or other firm white fish fillets), fresh or frozen, cut into serving-size portions
4 tablespoons butter
1/2 cup white wine, dry vermouth, or milk
2 shallots or scallions, finely chopped
2 tablespoons unbleached flour
1/2 teaspoon salt
1 1/2 tablespoons Dijon mustard
1 cup plain yogurt, drained through
2 thicknesses of cheesecloth for 30 minutes
Directions
1. Preheat the oven to 350 degrees.
2. Put the fish in a shallow, buttered baking dish. Dot with 2 tablespoons of the butter, pour the white wine over the fish, cover with wax paper, and bake for 15 minutes, or until the fish flakes easily.
3. Meanwhile, melt the remaining 2 tablespoons butter in a small saucepan and saute the shallots until tender but not browned. Sprinkle with the flour and cook for 1 minute longer.
4. Stir in the salt and mustard and all the liquid you can drain from the cooked fish. Bring to a boil, stirring until thickened. Stir a little of the hot mixture into the yogurt. Return all to the saucepan and reheat but do not boil.
