Baked Cod Fillets Au Gratin Recipe
Ingredients
| Frozen cod fillets - 2 pkg (12-oz size) , partially thawed | ||
| Tomato sauce - 1 can (8-oz) | ||
| Salt | 1/4 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Parsley | 3 Tablespoon, chopped | |
| Instant mashed potato - for 6 servings | ||
| Water | 1 (As required) | |
| Milk | ||
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Ground nutmeg | 1/2 Teaspoon | |
| Egg yolks | 2 | |
Directions
GETTING READY
1 Preheat the oven to 400 degrees Fahrenheit.
2 Lightly grease a 2-quart shallow baking dish with butter.
MAKING
3 Arrange partially thawed fillets in the dish.
4 In a small saucepan, add the tomato sauce with 1/4 teaspoon salt,1/8 teaspoon pepper and the parsley.
5 Bring to a boil and pour over cod.
6 Bake, uncovered, for 15 to 20 minutes, or until the fish flakes easily when pierced with a fork.
7 In the meantime, as per the package directions prepare mashed potato with water and milk only.
8 Add the remaining ingredients and mix well.
9 Remove fish from the oven.
10 Around the edge and down center of the baking dish, spoon the potato.
11 Broil for 3 to 5 minutes, or until potato is slightly golden.
SERVING
12 Serve hot.
