Ingredients

 Finnan haddie1 pound
 Cold water
 Salt pork1/4 Cup (16 tbs), diced
 Onion1 Cup (16 tbs), chopped
 2 cups diced raw potato
 Salt1/2 Teaspoon
 Ground pepper1 Dash
 Milk1 Quart
 Parsley2 Tablespoon, chopped

Directions

Cover finnan haddie with cold water and soak for 1 hour.
Cook salt pork until crisp, add onion and continue cooking until tender but not browned.
Drain fish and transfer to a buttered 2-quart baking dish.
Spoon salt pork, onion, potato and seasonings over finnan haddie.
Heat milk to boiling and pour over finnan haddie in casserole.
Cover and bake in a 350° F.oven for 45 minutes or until potatoes are tender.
Before serving, flake finnan haddie.
