Ingredients
| 2 whole chicken breasts, halved and skinned | ||
| Tomatoes | 4 Cup (16 tbs), chopped | |
| 1 small onion, coarsely chopped | ||
| Tomato Paste | 2 Tablespoon | |
| 1/2 sweet red pepper, coarsely chopped | ||
| Basil | 1 Teaspoon | |
| Thyme | 1 Teaspoon | |
| Oregano | 1/2 Teaspoon | |
| Garlic | 2 Clove (5gm), minced | |
| Red pepper | 1/4 Teaspoon, crushed | |
Directions
Arrange the chicken in the bottom of a large ovenproof casserole coated with no-stick spray.
Place the tomatoes, onions, red peppers, tomato paste, basil, thyme, oregano, garlic, and crushed red pepper in a blender.
Process on medium speed until smooth.
Pour the tomato sauce over the chicken.
Cover and bake at 350° for 30 minutes.
Remove the cover and continue baking for another 10 minutes.
Place the tomatoes, onions, red peppers, tomato paste, basil, thyme, oregano, garlic, and crushed red pepper in a blender.
