1 tbs (15 ml) olive oil
1/2 cup (120 ml) onion, diced
1/2 cup (120 ml) celery, diced
1 tbs (15 ml) fresh garlic, chopped
6 oz (180 g) mushrooms, crimini or portabello, if available
1 pkg Poultry Bouquet, leaves chopped
1 1/2 lbs (683 g) chicken breasts or turkey breast, boneless and skinless fresh ground black pepper, to taste
2 cups (480 ml) broccoli florets, steamed
Directions
Preheat oven to 350°F (180°C).
Spray nonstick skillet with cooking spray.
Heat half the oil, add onion, celery and garlic and saute for 5 minutes.
Add the mushrooms and half the herbs and cook another 2 minutes.
Transfer to a shallow baking dish.
Add remaining oil to the skillet and brown the poultry, about 2 minutes per side.
Place poultry over mushroom mixture and cover with foil.
Bake for 15 minutes.
