 Red cabbage head1⁄2
 Apple1 , cored and sliced
 Cipollini onions1 Pound
For lemon garlic paste
 Garlic2 Clove (10 gm), minced
 Salt and pepper To Taste
 Thyme1 Teaspoon
 Preserved lemon/Lemon zest1 Teaspoon, finely chopped (only skin of the lemon)
For dressing
 Bacon drippings/Olive oil2 Tablespoon
 Maple syrup3 Tablespoon
 Apple cider vinegar3 Tablespoon
For chicken
 Chicken thighs1 Pound (3 large thighs)
 Salt and pepper To Taste

Directions

GETTING READY
1. Preheat the oven to 375 degrees F.
2. In a large bowl, place all the onions and pour the boiling water. Cover for 5 minutes. This will speed up the process of removing the skins.
3. While the onions are steaming, roughly chop the cabbage and apple.
4. In a small bowl, mix the garlic, salt, pepper, thyme and preserved lemon together to create a paste. Set aside.
5. In another bowl, combine the bacon dripping, maple syrup and apple cider vinegar. Set aside.
6. Peel off the outer skin of the cipollini onions.

MAKING
7. In a large 9″ x 13″ baking dish place the red cabbage, apples and onions.
8. Pour the maple syrup mixture over the cabbage and stir to coat.
9. Cut a slit in the skin of the chicken pieces. Use fingers to create space between the skin and the meat. Put an even layer of lemon paste under the skin of the chicken pieces.
10. Season with salt and pepper. Place chicken over the onions.
11. Bake in oven for 45 minutes at 375 degrees F.

SERVING
12. Serve Baked Chicken with green salad.
