Baked Carrots Au Gratin Recipe

Ingredients
3 pounds carrots, blanched and sliced
1 small onion, minced
2 cups light cream
1/2 cup Cheddar cheese, grated
1/2 cup all-purpose flour
1 tablespoon butter
1/8 teaspoon nutmeg
Directions
1. Saute the onion in butter for 4-5 minutes over low heat.
2. Slowly add the flour and light cream, stirring constantly until mixture is smooth.
3. Mash the carrots in a food processor or force through a medium sieve.
4. Mix the onion mixture with the carrots and nutmeg and put the mixture in a shallow baking dish. Sprinkle with grated Cheddar cheese and bake in a preheated 325°F oven for 30-35 minutes.
