Baked Blueflsh With Olives And Tomatoes Recipe
Ingredients
| 2 tablespoons olive or vegetable oil | ||
| Yellow onion | 1 Small, chopped | |
| Green olives | 1/4 Cup (16 tbs), chopped | |
| 1/2 small sweet green pepper, cored, seeded, and chopped | ||
| Chopped tomatoes | 3 , drained | |
| Dry white wine | 1/2 Cup (16 tbs) | |
| Tomato Paste | 1/4 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Black pepper | 1/4 Teaspoon | |
| 1 1/2 pounds blueflsh or mackerel fillets | ||
Directions
1. Heat the oil in a 2-quart saucepan over moderate heat. Add the onion, olives, and green pepper, and cook uncovered, for 3 minutes. Add the tomatoes, and cook 5 minutes longer. Add the wine, tomato paste, salt, and black pepper, and simmer, uncovered, for 20 minutes.
2. About 10 minutes before the sauce is done, preheat the oven to 350°F. Place the blueflsh fillets in an ungreased 8"x8"x2" baking dish, and spoon the sauce over them. Bake, uncovered, for 10 minutes or longer, depending on the thickness of the fish. When the fish flakes easily when tested with a fork it is done.
