Baked Beans Recipe

Ingredients
1 1/2 pounds dried navy beans
3/4 pound salt pork
1 medium yellow onion
1/2 teaspoon salt
1/4 cup brown sugar
2 teaspoons dry mustard
1 cup light molasses
Directions
1. Wash beans and cover with 2 quarts of cold water. Refrigerate overnight, covered.
2. Place beans and water in a large kettle. Bring to a boil. Reduce heat to simmer and cook, covered, for 30 minutes. Drain. Reserve liquid.
3. Preheat oven to 300°F.
4. Trim rind from salt pork and cut into 1-inch cubes.
5. Chop onion and place in casserole. Add beans, pork, and 1 1/2 cups reserved liquid, mustard, and molasses. Cover and cook for 6 hours. Stir every hour.
6. Remove cover a half hour before baking time is up.
