Baked Pea Beans And Salt Pork Recipe
Ingredients
| Pea beans | 4 Pound, dried | |
| Water | 6 Quart | |
| 1 1/2 to 2 pounds lean salt pork | ||
| Onions | 2 , minced | |
| Salt | 4 Teaspoon | |
| 2 cups light molasses | ||
| Dry mustard | 1 Tablespoon | |
| Sugar | 1/4 Cup (16 tbs) | |
Directions
Cover beans with water, bring to boil, and boil for 2 minutes.
Cover and let stand for 1 hour; then cook until tender.
Drain, reserving liquid.
Score rind of pork and cut off thin slices of pork.
Put half of slices in pots or covered roasting pans.
Put beans in pots and top with remaining pork and scored rind.
Mix 1 quart bean liquid and remaining ingredients; pour over beans.
Add enough more liquid to cover beans.
Cover and bake in preheated slow oven (300°F.) for 6 to 8 hours.
Uncover during last hour.
