| 6 cutlets off a medium-sized barracouta | ||
| Plain flour | 1 Ounce | |
| Juice of 1/2 lemon | ||
| Butter | 2 Ounce | |
| 1 tablesp. chopped parsley | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Wash and dry the fish and place the slices side by side in a fireproof dish.
Mix the flour and seasoning together and sprinkle lemon juice over fish.
Mix the butter and parsley and place in small pieces on the fish.
Bake in a moderate oven (350° F., Gas 4) for 20 min., basting occasionally.
Serve on a hot dish with the liquor strained over.
