 Caster sugar2 Tablespoon
 Ground cinnamon1/2 Teaspoon
 Rum2 Tablespoon
 250 g / 8 oz mascarpone
 Bananas8 Small

Directions

MAKING
1. In a large bowl mix well the sugar, cinnamon and rum together, then stir in the mascarpone and set aside.
2. On a barbecue grill over hot coals cook the whole unpeeled bananas for about 10-12 minutes, turning as the skins darken, such that they are black all over and the flesh is very tender.

SERVING
3. To serve, split the bananas open and spread the flesh with the cinnamon and rum mascarpone cream.
