Ingredients

 Whole wheat flour1 Cup (16 tbs)
 1/2 cup non-fat dry milk
 Salt1/2 Teaspoon
 Egg yolks3 , beaten
 Oil1 Tablespoon
 Honey2 Teaspoon
 Water1 1/2 Cup (16 tbs)
 Egg whites3
 Bananas3
 Honey2 Tablespoon
 Nutmeg or cinnamon to taste

Directions

Preheat oven to 375°F.
Combine whole wheat flour, non-fat dry milk and salt.
Combine beaten egg yolks, oil, honey and water.
Stir wet ingredients into dry, to make a smooth batter.
Beat egg whites until stiff.
Fold them into batter.
Put oil into iron skillet or shallow baking dish and coat bottom and sides evenly.
Pour half of batter into it.
Slice bananas over batter, drizzle honey over them and sprinkle with nutmeg or cinnamon.
Pour the remaining half of batter on top.
Bake in preheated oven for 15 minutes.
Then turn oven to 325°F and continue to bake for 20 minutes more.
Serve immediately with whipped cream, if desired.
