Freshly grated Parmesan cheese - 1 cup
 
Reduced-fat sour cream - 1 cup
 
Mayonnaise - ½ cup
 
Green onion - 4, sliced
 
Fresh lemon juice - 3 Tablespoons
 
Garlic – 1 clove, pressed
 
Pepper Jack cheese - 1-1/4 cups (5 oz), shredded and divided
 
Frozen chopped spinach - 1 package (10-oz.), thawed and well drained
 
Medium-size artichoke hearts in water – 1 can (14 oz.), drained and chopped
 
Crackers, toasted baguette or assorted vegetables for dipping

Directions

GETTING READY
1. Preheat oven to 350°F.
2. Grease a 1 quart casserole dish, sprayed with cooking spray.

MAKING
3. Stir together first 6 ingredients and 1 cup of pepper Jack cheese.
4. Fold in spinach and artichokes.
5. Spoon into the greased casserole.
6. Sprinkle with the remaining ¼ cup pepper Jack cheese.
7. Bake in preheated oven for 30 minutes or until center is hot and edges are bubbly.

SERVING
8. Serve with assorted crackers, toasted baguette or assorted vegetables.
