Baked Apricot Chicken Recipe
Baked apricot chicken is a lovely fruited chicken preparation. Oven cooked, the chicken is coated with the fruit preserves and lemon juice mix with a hint of soy sauce and breaded with crumbs. Easily prepared, it is refreshingly different and delicious.
Ingredients
| 1 (10-ounce) jar Apricot or Peach Preserves | ||
| 1/4 cup Lemon Juice from Concentrate | ||
| Soy sauce | 2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| 1 (2 1/2- to 3-pound) broiler-fryer chicken, cut up | ||
| Dry bread crumbs | 1 Cup (16 tbs) | |
| Butter margarine | 1/4 Cup (16 tbs), melted | |
Directions
Preheat oven to 350°.
In shallow dish, combine preserves, brand, soy sauce and salt.
Coat chicken with apricot mixture; roll in bread crumbs.
Set aside remaining apricot mixture.
In greased 13 x 9-inch baking dish, arrange chicken; drizzle with margarine.
Bake uncovered 1 hour or until tender.
Heat remaining apricot mixture; serve with chicken.
Refrigerate leftovers.
