Ingredients
1 1/2 cups vanilla low-fat ice cream, softened
1/2 teaspoon ground cinnamon
6 small Rome apples
6 tablespoons brown sugar
1/4 cup reduced-calorie stick margarine
2 tablespoons raisins
Ground cinnamon (optional)
Directions
1. Combine softened ice cream and 1/2 teaspoon cinnamon in a 9-inch square baking pan; stir well. Spread evenly in pan; cover and freeze 2 hours or until firm.
2. Core apples, cutting to, but not through, bottom of each apple. Spoon 1 tablespoon brown sugar, 2 teaspoons margarine, and 1 teaspoon raisins into center of each apple. Place apples in an 11- x 7-inch baking dish; cover with heavy-duty plastic wrap, and vent. Microwave at HIGH 10 minutes or until apples are tender, turning dish a half-rurn after 5 minutes.
3. Place apples in individual serving dishes; drizzle cooking liquid in baking dish evenly over apples. Top each apple with 1/4 cup ice cream mixture. Sprinkle with cinnamon, if desired.
