Baked Apples Recipe
Ingredients
| 4 Rome or Gala apples | ||
| Lemon | 1 | |
| 1/2 cup raisins, coarsely chopped | ||
| Walnuts | 1/4 Cup (16 tbs), chopped | |
| 1/4 cup packed light brown sugar | ||
| Cognac | 1 Tablespoon | |
| Ground cinnamon | 1 Teaspoon | |
| Ground cloves | 1/4 Teaspoon | |
| Cornstarch | 1 1/2 Teaspoon | |
| Orange juice | 1 1/2 Cup (16 tbs) | |
Directions
Preheat the oven to 350°F.
Using a corer or paring knife, make a 1 "-diameter hole through the core of each apple.
Place the apples, right side up, in a 9" X 9" baking dish.
Grate the rind from the lemon into a medium bowl.
Cut the lemon in half and squeeze the juice into the bowl.
Discard the lemon.
Stir in the raisins, walnuts, brown sugar, cognac (if using), cinnamon, and cloves.
Spoon into the apples.
Place the cornstarch in a small bowl.
Add the orange juice and stir until smooth.
Pour around the apples.
Bake for 50 to 60 minutes, or until softened; occasionally baste the apples with the pan juices.
Serve warm.
