Ingredients
4 med baking apples
1 tsp fructose
1/3 canned crushed pineapple packed in juice, drained
2 tsp raisins (optional)
1/4 tsp cinnamon
2-4 cup Unsweetened apple juice
Directions
Peel the top of each apple.
Use a sharp knife to remove the core, but leave the bottom intact so the hollow can be filled.
Cut a thin slice from the bottom, if necessary, so the apple stands upright.
In a small bowl, combine the fructose, pineapple, raisins, and cinnamon.
Spoon the mixture equally into each apple hollow.
Place the apples in a shallow baking dish.
Surround the apples with apple juice to a depth of about 1/2 inch (1.25 cm).
Bake in a preheated 350°F (180°C) oven for about an hour.
The apples should be tender, but not mushy.
