Ingredients
PUDDING:
1 Cup Sifted Flour
1 Tsp. Baking Soda
1 Tsp. Cinnamon
3/4 Tsp. Nutmeg
1/4 Tsp. Salt
3/4 Cup Butter
1 Cup Sugar
1 Egg, unbeaten
2 or 3 Medium Apples, washed, unpared
SAUCE:
1/2 Cup Butter
1 Cup Sugar
1/2 Cup Light Cream
Dash Nutmeg
1 Tsp. Vanilla
1 Tsp. Rum Extract OR 2 to 3 Tbs. Rum
Directions
Heat oven to 400 degrees.
Grease an 8x8" pan.
Sift first 5 ingredients.
With mixer at cream, mix butter with sugar and egg until light and fluffy.
Grate apples, medium fine.
Measure 2 Cups.
Add to egg mixture.
At low speed, beat in flour mixture, just until mixed.
Pour into pan.
Bake 20 to 30 min.
Cool; store in pan.
Cut into 8 squares.
Rum Butter Sauce: In double boiler, mix butter with sugar and cream.
Cook, stirring 10 to 15 min., or until slightly thickened.
Add nutmeg, vanilla and rum extract.
