Ingredients

 Apples 5 Pound
 3 cups apple cider or apple juice
 Brown sugar
 Cinnamon, cloves, allspice, and nutmeg to taste

Directions

Wash and quarter the apples; remove stems and blemishes.
Place in a large pan and add cider.
Cover and cook the fruit gently until it is quite soft.
Force through a colander or food mill; measure the pulp.
For every cup of fruit pulp, stir in about 1/2 cup of brown sugar, depending upon the sweetness of the apples, and spices to taste.
(For 4 to 5 pounds apples, about 2 teaspoons cinnamon,1/2 teaspoon cloves, 1 teaspoon allspice, and 1/4 teaspoon nutmeg may be a combination which will please your tastes.) Place fruit in a heavy baking pan and bake in a 275° to 300° oven until butter is thick and dark.
(If desired, butter may be partially cooked on top of range, then placed in oven.) Pour hot into hot, sterilized glasses and seal.
