Ingredients

 Cheese pastry
 Flour4 Ounce
 Pinch salt, cayenne pepper and baking powder
 Butter1 1/2 Ounce
 2 oz. Cheddar cheese, finely grated cold water to bind
 8 oz. cooking apples
 Cheddar Cheese2 Ounce, diced (Filling)
 Granulated Sugar1/2 Ounce (Filling)
 Nutmeg1/2 Teaspoon (Filling)
 Little egg white or milk
 1/2 teaspoon Cheddar to glaze cheese, finely grated

Directions

Sieve flour, salt, cayenne pepper and baking powder.
Rub in butter.
Add grated cheese and sufficient cold water to bind.
Leave to stand in a cool place.
Peel, core, quarter and slice apples, and mix with diced cheese, sugar and nutmeg.
Roll out pastry to an 8-inch square.
Cut six 1/2-inch strips off one side, and keep for latticing; use rest of pastry as base of flan.
Lift on to baking tray.
Spread filling over centre of this strip and fold over 3/4-inch of pastry on each side.
Place diagonal strips of pastry 1/2-inch apart down the length of the flan.
Glaze top of flan with egg white or milk, and sprinkle with very finely grated cheese.
Bake in centre of a moderately hot oven (400°F - Gas Mark 5) for 25-30 minutes.
Serve hot or cold.
