Baja Bites Recipe
Ingredients
| Eggs | 5 | |
| Cottage cheese | 1 Cup (16 tbs) | |
| All purpose flour | 1/4 Cup (16 tbs) | |
| Baking powder | 1/2 Teaspoon | |
| Butter | 1/4 Cup (16 tbs), melted | |
| Green onions | 2 Tablespoon, minced | |
| Green chilies | 1 Can (10oz), chopped | |
| Monterey jack cheese | 2 Cup (16 tbs), grated |
Directions
Grease an 8-inch square baking pan; set aside.
Preheat oven to 350°F (175°C).
In a large bowl, beat eggs.
Add cottage cheese; beat until almost smooth.
Beat in flour, baking powder and melted butter until thoroughly blended.
Stir in onions, chilies and Monterey Jack cheese.
Pour evenly into prepared pan.
Bake 30 to 40 minutes in preheated oven until firm in center.
Let cool slightly.
Cut into 5 rows horizontally and 5 rows vertically; serve warm.
