Baja Baked Haddock Recipe
Ingredients
| 2 medium-size tomatoes, coarsely chopped | ||
| 1 small hot red pepper, seeded | ||
| Tamari soy sauce | 2 Teaspoon | |
| Oregano | 1/2 Teaspoon | |
| Dash of ground cumin | ||
| Garlic | 2 Clove (5gm) | |
| Haddock fillets | 3/4 pound | |
| Corn tortillas | 2 , steamed | |
| Parsley sprigs (garnish) | ||
| Cherry tomatoes (garnish) | ||
Directions
Place the tomatoes, pepper, tamari, oregano, and cumin in a blender.
Push the garlic through a garlic press into the blender.
Process on medium speed until smooth.
Place the haddock in an 8 X 8-inch baking dish coated with no-stick spray and top with the sauce.
Bake at 375° for 20 minutes or just until the fish flakes when tested with a fork.
