Ingredients

 
1 Eggplant
 
1 onion (Chopped)
 
2 tomatoes (chopped)
 
1 tbsp finely chopped garlic
 
1 tbsp finely chopped ginger
 
1/2 cup fresh/frozen peas (Optional)
 
1/4 tsp turmeric powder
 
1/2 tsp red chilli powder
 
1/2 tsp garam masala powder
 
2 green chillies (finely chopped)
 
2 tbsp oil
 
Salt to taste
 
Cilantro for garnishing

Directions

Apply some oil to an eggplant and cook it in microwave for about 8 minutes. Roast it in a hot pan for about 10 minutes turning in between. Allow it to cooldown. Peel off the skin and either mash it or chop it finely.
Heat oil in a pan, add chopped onions. Fry till light brown.
Add chopped ginger, garlic and green chillies and saute for few more minutes.
Add turmeric powder and red chilli powder. Saute for another one minute.
Add tomatoes and cook till they are mushy.
Add peas and salt, cover and cook till peas is soft.
Add eggplant and mix well. Add garam masala powder and saute on medium high heat till all the water evaporates.
Serve hot garnished with chopped cilantro.
