Baigan Bharta Recipe
|Brinjal||500 Gram (Large Sized)|
|Water||1⁄2 Cup (8 tbs)|
|Desi ghee||2 Tablespoon|
|Lightly fried onion and garlic||2 Tablespoon|
|Ginger piece||1 , finely chopped|
|Roasted pounded cumin seeds||1⁄2 Teaspoon|
|Coriander seed powder||1 Teaspoon|
|Turmeric powder||1⁄2 Teaspoon|
|Curry leaves||4 , chopped|
|Green chillies||4 , finely chopped|
|Sour yogurt||1 Cup (16 tbs), lightly beaten|
|Finely chopped coriander leaves||1 Tablespoon (For Garnish)|

Microwave brinjai covered in a large deep bowl with water for 15 minutes.
Let it stand for 5 minutes.
Peel brinjai and mash it or chop it very fine w,ith the liquid.
In another bowl put ghee and all the ingredients upto green chillies and microwave for 3 minutes.
Stir in the brinjai, salt and 1/2 cup of water and microwave for 15 more minutes, stirring once in between.
Let it stand until ready to serve, then stir in the rest of the ingredients, and microwave for 3 minutes more, stirring in between.
Garnish with coriander leaves.
