 Brinjal500 Gram (Large Sized)
 Water1⁄2 Cup (8 tbs)
 Desi ghee2 Tablespoon
 Lightly fried onion and garlic2 Tablespoon
 Ginger piece1 , finely chopped
 Roasted pounded cumin seeds1⁄2 Teaspoon
 Coriander seed powder1 Teaspoon
 Turmeric powder1⁄2 Teaspoon
 Curry leaves4 , chopped
 Green chillies4 , finely chopped
 Salt To Taste
 Sour yogurt1 Cup (16 tbs), lightly beaten
 Sugar1 Tablespoon
 Finely chopped coriander leaves1 Tablespoon (For Garnish)

Directions

Remove the stem and cut brinjai into 4 pieces.
Microwave brinjai covered in a large deep bowl with water for 15 minutes.
Let it stand for 5 minutes.
Cool.
Peel brinjai and mash it or chop it very fine w,ith the liquid.
In another bowl put ghee and all the ingredients upto green chillies and microwave for 3 minutes.
Stir in the brinjai, salt and 1/2 cup of water and microwave for 15 more minutes, stirring once in between.
Let it stand until ready to serve, then stir in the rest of the ingredients, and microwave for 3 minutes more, stirring in between.
Garnish with coriander leaves.
