Baigan Bharta Recipe
Baigan Bharta is healthy and simple to prepare. The desi ghee gives the Baigan Bharta a majestic taste. Must catch it
Ingredients
500 gms large brinjai
1/2 cup water
2 tbsp desi ghee
2 tbsp lightly fried onion and garlic
1 piece finely chopped ginger
1/2 tsp roasted and pounded cummin seeds
1 tsp coriander seeds powder
1/2 tsp turmeric powder
A few chopped curry leaves
4 finely chopped green chillies
Salt
1 cup lightly beaten sour yoghurt
1 tbsp sugar
TO GARNISH
1 tbsp finely chopped coriander leaves
Directions
Remove the stem and cut brinjai into 4 pieces.
Microwave brinjai covered in a large deep bowl with water for 15 minutes.
Let it stand for 5 minutes.
Cool.
Peel brinjai and mash it or chop it very fine w,ith the liquid.
In another bowl put ghee and all the ingredients upto green chillies and microwave for 3 minutes.
Stir in the brinjai, salt and 1/2 cup of water and microwave for 15 more minutes, stirring once in between.
Let it stand until ready to serve, then stir in the rest of the ingredients, and microwave for 3 minutes more, stirring in between.
Garnish with coriander leaves.
