Bahamian Peas & Rice Recipe

Ingredients
2 Tb vegetable oil 25 mL
3 tomatoes, coarsely chopped 3
1 onion, chopped 1
1/2 large green pepper, seeded and chopped 1/2
1 1/2 cups long grain rice 375 mL
1 can (16 oz/454 mL) green pigeon peas or black eyed peas, undrained 1
1/3 cup tomato paste 75 mL
2 tsp dried thyme 10 mL
1/4 tsp each salt and pepper 1 mL
Directions
In large saucepan, heat oil over high heat; add tomatoes and stir well.
Cook, covered, over medium heat 10 minutes, stirring occasionally.
Add onion and green pepper; cook, covered, over medium low heat 10 minutes or until tomatoes and onion are softened.
Add remaining ingredients; stir well.
Bring to boil over high heat.
Reduce heat to low; simmer, covered, about 25 minutes or until rice is tender and has absorbed most of liquid.
If mixture appears too moist, remove lid; cook over medium high heat 3 to 5 minutes, stirring often.
