1 loaf Basic White Bread
 
4 qts. water
 
1 tsp Salt

Directions

Form dough into a square about 1/2 in. (1.3 cm) thick.
Using a sharp knife, cut into 12 equal squares.
Push your thumb through the middle of each square and roll around your fingers, forming a large doughnut shape.
Work each into a uniform shape.
Cover with a towel and let rise for 20 minutes.
Pour the water into a deep pot; add the salt and stir.
Bring to the boil and keep water just under the boiling point.
Add bagels, one at a time; cook 4 or 5 at the same time, but do not overcrowd your pot.
Simmer each bagel for 7 minutes; remove from water with a fork or slotted spoon.
Place on a towel to drain and cool.
Allowing space between each bagel, place on an unoiled baking sheet.
Bake at 375°F (190°C) for 30 to 40 minutes or until brown.
