10 boiled eggs
 
1/2 coconut, milk removed
 
4 potatoes
 
2 large onions, finely ground
 
2 large tomatoes, chopped
 
1/2 coconut, grated
 
10 Kashmiri chillies
 
4 tablespoons coriander seeds
 
1 tablespoon white sesame seeds
 
1 teaspoon poppy seeds
 
1/2 teaspoon turmeric powder
 
1/4 cup skinned monkey nuts
 
1/4 cup skinned gram or chana jaggery (size of a sour lime)
 
10 cloves garlic
 
2 sprigs curry patta
 
3 tablespoons oil

Directions

1. Heat the oil in a dekchi along with the curry leaves, add finely chopped tomatoes. When the oil starts sizzling put in the finely ground masala and onions also, and allow to roast till red. Add salt. Stir well so that the masala does not burn and stick to the bottom of the vessel.
2. Chop the potatoes into cubes and add them to the masala along with the coconut milk and two cups of water. Stir and allow to cook over a medium flame. Cook till potatoes are tender. Add more water as required.
3. Shell the eggs and sprinkle them with a pinch of saffron colour. Heat one tablespoon of oil in a frying pan and roll the eggs in the oil for a moment and then place them in the cooked curry.
