Badam Nandu Vada Recipe
Badam nandu vada is a cooked pakoda like preparation made with cooked crabmeat and ground almonds. Combined with spices like ginger, chilies and turmeric, the badam nandu vada is deep fried to a golden brown and served hot.
Ingredients
| Crab meat | 150 Gram | |
| 30 gm almond, blanched and ground to a coarse paste juice of 2 limes | ||
| Onion | 60 Gram, chopped | |
| Turmeric powder | 3 Gram | |
| Green chillies | 3 , chopped | |
| 6 gm aniseed powder | ||
| Peppercorns | 15 Gram, finley crushed | |
| Ginger | 5 Gram, chopped | |
| Curry leaves | 12 , chopped | |
| Coriander leaves | 25 Gram, chopped | |
| Frying Oil | 45 Milliliter (For frying) | |
| Salt | To Taste | |
Directions
Heat oil in a pan, toss in onions, green chillies, ginger, turmeric and curry leaves.
Saute till onions turn translucent.
Add crab meat, aniseed and peppercorn powder.
Stir fry for 2 minutes and add almond paste.
Saute for 1-2 minutes more and add salt.
Remove from fire, add lime juice and chopped coriander leaves.
Mix well and leave to cool.
Make 24 equal sized balls.
Flatten to form discs and deep fry till golden brown.
Serve hot.
