Badam Nandu Vada Recipe

Badam nandu vada is a cooked pakoda like preparation made with cooked crabmeat and ground almonds. Combined with spices like ginger, chilies and turmeric, the badam nandu vada is deep fried to a golden brown and served hot.

Ingredients

 Crab meat150 Gram
 30 gm almond, blanched and ground to a coarse paste juice of 2 limes
 Onion60 Gram, chopped
 Turmeric powder3 Gram
 Green chillies3 , chopped
 6 gm aniseed powder
 Peppercorns15 Gram, finley crushed
 Ginger5 Gram, chopped
 Curry leaves12 , chopped
 Coriander leaves25 Gram, chopped
 Frying Oil45 Milliliter (For frying)
 Salt To Taste

Directions

Heat oil in a pan, toss in onions, green chillies, ginger, turmeric and curry leaves.
Saute till onions turn translucent.
Add crab meat, aniseed and peppercorn powder.
Stir fry for 2 minutes and add almond paste.
Saute for 1-2 minutes more and add salt.
Remove from fire, add lime juice and chopped coriander leaves.
Mix well and leave to cool.
Make 24 equal sized balls.
Flatten to form discs and deep fry till golden brown.
Serve hot.
