Directions
Beat egg whites until stiff, and beat yolks until thick and lemon colored.
Add milk and sifted dry ingredients to egg yolks.
Beat until batter is smooth.
Fold in egg whites. Batter should be thin.
Put 2 half-strips of bacon on each section of grids of waffle iron.
Close iron and allow bacon to fry for about 1 minute or until it is beginning to brown.
Pour batter over bacon and bake according to directions for using waffle iron.
Repeat until all batter is used, adding bacon each time.
Serve hot spread with honey butter.
Note: If you are making these waffles without the bacon, add 6 tbsp melted shortening to the batter before folding in egg whites.
